About me:

My name is Manny Golez, an avid self-taught home bread baker. I came across a beautiful country loaf from Tartine Bakery in San Francisco, CA ten years ago and fell in love with it. I told myself I will learn how to make that loaf. I purchased Chad Robertson's Tartine Bread book and kept working at it. Fast forward 10 years later, here I am. I started with the Tartine recipe and methodology and continued to tweak and play with it. I took this recipie and incorporated others I came across over the years. This is how my country loaf was born.

I've ventured out to making other breads, including baguettes, brioche, and croissants. The basis of the baguette recipe came from Bertinet Bakery in London. Much like the country loaf, I tweaked and played with it until I got the optimal flavor, crumb, and chewiness.

About Sophie:

Sophie was our first puppy child, the sweetest dog we ever had. She's a tennis ball lover, chasing each one tirelessly. She loved going on adventures, visiting beaches, exploring new cities, and road tripping thru the Redwoods and Yosemite. We lost her to cancer in 2018. Naming the bakery after her is my way of honoring her memory. Your daddies love and miss you Sophie!
